Overnight pumpkin oatmeal in the slow cooker with old fashioned rolled oats!

Sometimes the traditional cold overnight oats are just not what you are craving, especially if the morning is running a little cooler. So it's slow cooker overnight oats to the rescue!
Most recipes out there will have you using steel cut oats. I'm just not a fan. So with some experimentation, I came up with a rolled oats slow cooker recipe that tastes like you should be feeling guilty, but your mind knows the truth!
DISCLAIMER - Know your personal slow cooker! Appliances run differently in heat levels and so forth. AND - this rolled oats recipe will make more of a porridge consistency or thick lumpy pudding.
Serving size is 1 cup
Calories per serving is about 276 without toppings
6 or 7 quart slow cooker
slow cooker bags (for easy clean up)
Ingredients:
2 1/4 cups old fashioned rolled oats
4 cups unsweetened vanilla almond milk ( you could use water if you'd like.)
1 can 100% pure pumpkin puree (15 oz)
1/4 cup pure maple syrup
1 1/2 tablespoon pure vanilla extract
1 tablespoon cinnamon
1 teaspoon pumpkin spice (alternately you could use 1/2 teaspoon ground cloves and 1/2 teaspoon ground nutmeg)
1/2 teaspoon natural sea salt (optional)
Toppings (optional) choose one or as many as you like :)
chopped pecans
raisins or craisins
additional maple syrup
(any other fall flavor you want to add to your bowl after cooking)
Recipe:
-Line slow cooker with slow cooker bag. (alternately you could spray the bottom with a non stick cooking spray.)
-Put all of the ingredients into the slow cooker and give it a good stir to mix it all up! YUM!
-Place lid on slow cooker.
-Make sure it's plugged in (Yes, I forget this step sometimes and it's not good when you're looking forward to starting the morning of right.)
-Turn the slow cooker to low and let it go for 7 hours.
-The next morning remove the lid, and stir it up again.
-Ladle it into a bowl. Each serving is 1 cup of oats.
-Add any additional toppings to your bowl if you'd like.

(I have never used the high power on a slow cooker for this recipe, I do not know how you would adjust it, and if the oats would turn out okay or not.)
